We powered off the SAN, and rescanned the datastores assuming this would remove the last of the connecitons, but I can still see the datastore greyed out under the storage section Remove Storage I/o Control Through Vcenter Its possible one of them has a snapshot or something and still has references to it left over.

I had this happen with our old software datastores where people snapshot the boxes with ISOs mounted and then I can't ever get rid of the references. Datastore Conflicts With An Existing Datastore Remove the snapshots, make sure there are no references to the old datastore and it should go away.
